Homemade mac & cheese mini

So I haven’t posted in awhile because I’ve been sick and didn’t want to subject you to pictures of toast, scrambled eggs, instant chicken soup, plain rice, etc. Today is probably my first real food day in almost a week and what a way to come back! Probably too heavy to start, but I made it just fine. My wife made her signature dish of scratch M&C, with the béchamel sauce and all. Best part is its teeming with chunks of thick sliced smoked bacon! Usually she bakes it off in a large, liberally buttered bowl. This time she did three large ramekins, liberally buttered, the perfect individual size.
