Claim Jumper

It’s NYE Claim Jumper style for us tonight. Back home early and laying low, just how I like it.

So I saw on CJs FB page a promo for their Shrimp Trio Platter for a limited time only. I had to try it! It included their BBQ shrimp which I’ve featured here before. It’s stuffed with cream cheese, a jalapeño sliver, wrapped in bacon and glazed in BBQ sauce. Truly a flavor sensation. Also included grilled shrimp and some huge fried shrimp with a great cocktail sauce. I caught a few slugs of horseradish that really opened me up.

Anyway, as is usually the case, what you see in their promotional material is not exactly how it looks in real life. A perfect example here. Despite the ghastly presentation, it was all very tasty.



Homemade cannelloni

Just about everything here was from scratch. Homemade pasta sheets filled with a ground beef, Italian sausage and ricotta mixture. Baked on a bed of homemade tomato sauce and topped with a silky bechemel. Baked at 375 covered for about 30 minutes, then uncovered and topped with an Italian cheese blend and baked for another 20 minutes. Stood for about 10 minutes before serving.

First time making this and it turned out great. Kind of risky considering we were entertaining friends.


Panda Express

Peppercorn shrimp, orange chicken and chow mein. Not bad for pre-made Chinese food in chafing dishes. The shrimp is really the stand out here. Especially with the asparagus.


One Year!

That’s right, one year ago today this blog was born with some Farm Rich appetizer snacks. Thank you all for the likes, comments and follows!

Chuck E. Cheese

Bad pizza is of course better than no pizza. My 7 yr old enjoyed it though…


Teriyaki Chicken

So those bottles of teriyaki sauce I got at Samurai Sam’s a few weeks ago were put to good use tonight. I tell you, a little bit of that Sriracha sauce goes a long way.

Because there was no room at the Olive Garden. Christmas Eve dinner with family before church. Chicken Cordon Bleu.


Rigatoni alla Vodka

Tried making this for the first time tonight. I’d really like to use pennoni pasta but that’s hard to find so I used rigatoni instead. Turned out to be a great substitute. I made the sauce with julienned bacon, onion and garlic. Then about a half cup of vodka, reduced down before adding tomato sauce and then some heavy whipping cream. Everyone loved it. The general consensus was it tastes better than it looks.


Outback Steakhouse

This is a beefy top sirloin crowned with lump crabmeat and hollandaise sauce. The catsup that came with my Aussie fries was quickly tossed aside for some of their excellent remoulade sauce.
