Super Bowl Sunday

We are making homemade potato skins for the first time. It’s so easy and tasty. Just bake off some potatos, then let cool for a bit. Slice down in half and scoop out enough potato flesh (or is it meat?) to leave about a half inch thick potato wall. Brush the halves with some olive oil, then back in the oven for 10 minutes. Invert, brush some more oil and back in for another 10. Finally, fill with cooked bacon crumbles and shredded sharp cheddar cheese, then back in the oven for another 10. Top with green onions and serve with a side of sour cream. Turned out excellent and crispy. All the above was done at 425F.

Good luck to the Omaha Mannings today! Even though they beat our Chargers, my son and I are rooting for Denver. My wife’s opinions are a bit more complex and deep I think.
