Just after crossing into Texas on I-40 the interstate came to a complete halt! It was literally a parking lot for hours. It did not help that we were in a bad cell area either. Fortunately we brought old fashioned paper maps with us! Remember those? Anyway, we were able to chart an alternate course that got us to Amarillo, albeit much later than expected. It was really nice driving those farm roads through the beautiful Texas countryside and farm land. I have never seen 2-lane highways that were so straight, flat and long!
We finally made it to the Embassy Suites in Amarillo. It was pretty late so we just had dinner at the hotel. I have to say, all the Embassy Suites in-house restaurants I’ve been to across the country have always been top shelf! Here in Amarillo it was no different. Their hotel restaurant is called “1887 Social House”. I ordered an outstanding Pressed Cuban Sandwich! Smoked pulled pork, hickory ham, butter pickles, Swiss cheese and mustard aioli pressed all panini style. I’ve had many Cuban sammiches in my day and I don’t think I’ve ever had one so stacked and delicious!
